It wasn’t until the 15th century that the holiday shifted from being a day of cooking and camaraderie to one of sweet whispers and sugary treats. Who changed the course of history? No one really knows, but it’s safe to say it wasn’t a grill enthusiast. So, let’s make 2021 the year we return to our roots and enjoy a romantic, flavorful meal with grilled lamb chops and rosemary potatoes.

Garlic & Mint Grilled Lamb Chops

Lamb chops are one of the most tender cuts of meat you can grill. When cooked properly, they lock in their juices and deliver a rich, savory flavor. But they’re also picky about their seasonings. They love garlic, mint, rosemary, and thyme. This recipe highlights the perfect combination of garlic and mint, creating a dish that’s both aromatic and delicious.

Here’s what you’ll need:

  • 1/3 Cup of Virgin Olive Oil
  • ½ Cup of Chopped Mint Leaves
  • 3 Cloves of Garlic (Minced)
  • ½ Teaspoon of Black Pepper
  • Sea Salt
  • 10 Petite Rib Lamb Chops (2 Pounds)

How to Prepare the Lamb Chops

Start by preheating your PGS Grill to medium heat. In a bowl, mix the olive oil, mint, and black pepper. Rub each lamb chop with minced garlic, then brush them with the mint oil on both sides. Sprinkle with sea salt before placing them on the grill.

Grill each side for 3-4 minutes, flipping only once. The chops should be slightly firm and juicy when done. Serve warm, with a final drizzle of mint oil for extra flavor.

Grilled Rosemary Potatoes

For the potatoes, you'll need:

  • 1 Pound of Potatoes Sliced into 1-Inch Thicknesses
  • 1 Yellow Onion Diced into Small Pieces
  • 5 Peeled and Chopped Garlic Cloves
  • 2 Teaspoons of Crushed Rosemary
  • 1 Teaspoon Sea Salt
  • ½ Teaspoon of Black Pepper
  • 1 Teaspoon of Paprika

How to Prepare the Potatoes

How to Make the Mint Sauce

In a bowl, mix the sugar and mint leaves. Pour in the boiling water and stir until the sugar dissolves. Add the remaining ingredients and let it steep for 20 minutes. Serve warm with a small spoon.
